How to check the date/time of last SQL table change

The best approach is to use a trigger or a LastUpdatedOn datetime field. But as partial solution you can check sys.dm_db_index_usage_stats (this data is reset every time SQL Server is restarted, or when the database is detached)

SELECT 
    last_user_update
FROM
    sys.dm_db_index_usage_stats
WHERE
    [database_id] = db_id('DB_Name')
AND
    [object_id] = object_id('Table_Name')
